Ingredients
- 3–4 lb boneless turkey breast (skin-on for best results)
- 4 tbsp butter, softened
- 3 tbsp honey
- 3 tbsp pure maple syrup
- 4 cloves garlic, minced
- 2 tbsp olive oil
- 1 tbsp Dijon mustard
- 1 tbsp fresh rosemary, chopped
- 1 tbsp fresh thyme, chopped
- 1 tsp paprika
- 1 tsp sea salt
- ½ tsp black pepper
- 1 lemon, halved (optional)
- 1 small onion, quartered (optional)
- Fresh herbs for serving (optional)
Instructions
- Preheat oven to 350°F (180°C). Place a rack in the center.
- Pat the turkey breast dry with paper towels to ensure crispy skin.
- Loosen the skin with your fingers and rub half of the butter-honey-herb mixture under the skin.
- Spread the remaining mixture over the skin.
- Line a roasting pan with onion wedges and lemon halves, then place the turkey on top, skin-side up.
- Roast for 60–90 minutes (depending on size) until internal temperature reaches 160°F (71°C).
- Halfway through, spoon pan juices over the turkey.
- Let the turkey rest for 10–15 minutes before slicing (temperature will rise to 165°F).
Notes
For extra moisture, add chicken broth to the pan while roasting. You can substitute maple syrup with apple cider or add cayenne for a bit of heat.
