Ingredients
- 3 1/2 oz dark chocolate (62% cacao), chopped
- 1 tablespoon unsalted butter
- 2 large egg yolks
- 1 tablespoon white sugar
- 1/4 cup water
- Pinch of salt
- 1/2 cup heavy whipping cream, chilled
Instructions
- Chop chocolate into small pieces and place in a bowl with butter.
- In a heatproof bowl, whisk egg yolks, sugar, water, and salt.
- Cook over medium-low heat, whisking constantly, until thick, foamy, and hot.
- Remove from heat and whisk in chocolate and butter until smooth.
- Let chocolate mixture cool slightly, whisking occasionally.
- Whip heavy cream to medium stiff peaks.
- Fold one-third of the chocolate mixture into the whipped cream.
- Gently fold in remaining chocolate mixture until fully combined.
- Spoon mousse into serving dishes, cover, and refrigerate for at least 1 hour.
Notes
Fold gently to keep the mousse light and airy. Serve with berries, whipped cream, or chocolate shavings. Can be made a few hours ahead and chilled until ready to serve.
