Ingredients

  • 3 1/2 oz dark chocolate (62% cacao), chopped
  • 1 tablespoon unsalted butter
  • 2 large egg yolks
  • 1 tablespoon white sugar
  • 1/4 cup water
  • Pinch of salt
  • 1/2 cup heavy whipping cream, chilled

Instructions

  1. Chop chocolate into small pieces and place in a bowl with butter.
  2. In a heatproof bowl, whisk egg yolks, sugar, water, and salt.
  3. Cook over medium-low heat, whisking constantly, until thick, foamy, and hot.
  4. Remove from heat and whisk in chocolate and butter until smooth.
  5. Let chocolate mixture cool slightly, whisking occasionally.
  6. Whip heavy cream to medium stiff peaks.
  7. Fold one-third of the chocolate mixture into the whipped cream.
  8. Gently fold in remaining chocolate mixture until fully combined.
  9. Spoon mousse into serving dishes, cover, and refrigerate for at least 1 hour.

Notes

Fold gently to keep the mousse light and airy. Serve with berries, whipped cream, or chocolate shavings. Can be made a few hours ahead and chilled until ready to serve.
