Ingredients
- 1 1/2 cups milk or water
- 1/2 cup oil or melted butter
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 1/4 cups + 2 tablespoons all-purpose flour
- 1/4 cup granulated sugar
- 3 tablespoons baking powder
- 1 teaspoon salt
Instructions
- In a large bowl, whisk together milk, oil, eggs, and vanilla.
- In another bowl, mix flour, sugar, baking powder, and salt.
- Add dry ingredients to wet ingredients and stir gently until just combined.
- Heat a nonstick skillet over medium-low heat and lightly grease.
- Place a heart-shaped mold on the skillet and pour batter inside.
- Cook for 2–3 minutes until bubbles form and the bottom sets.
- Carefully remove the mold, flip the pancake, and cook 2–3 minutes more.
- Repeat with remaining batter and serve warm.
Notes
For best results, do not overmix the batter. Pancakes can be made without a mold using a squeeze bottle. Leftovers store well and can be frozen for easy breakfasts.
