Ingredients

  • 1 1/2 cups milk or water
  • 1/2 cup oil or melted butter
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 1/4 cups + 2 tablespoons all-purpose flour
  • 1/4 cup granulated sugar
  • 3 tablespoons baking powder
  • 1 teaspoon salt

Instructions

  1. In a large bowl, whisk together milk, oil, eggs, and vanilla.
  2. In another bowl, mix flour, sugar, baking powder, and salt.
  3. Add dry ingredients to wet ingredients and stir gently until just combined.
  4. Heat a nonstick skillet over medium-low heat and lightly grease.
  5. Place a heart-shaped mold on the skillet and pour batter inside.
  6. Cook for 2–3 minutes until bubbles form and the bottom sets.
  7. Carefully remove the mold, flip the pancake, and cook 2–3 minutes more.
  8. Repeat with remaining batter and serve warm.

Notes

For best results, do not overmix the batter. Pancakes can be made without a mold using a squeeze bottle. Leftovers store well and can be frozen for easy breakfasts.
