Ingredients
- 2 cups fresh strawberries, hulled and halved
- 1 cup frozen strawberries
- 1/2 cup white rum (light rum)
- 1/4 cup fresh lime juice (2-3 limes)
- 3 tablespoons simple syrup (adjust to taste)
- 3 cups ice cubes
- Fresh mint, lime slices, and whole strawberries for garnish
For Simple Syrup:
- 1/2 cup water
- 1/2 cup granulated sugar
Instructions
- Prep ingredients: Hull and halve fresh strawberries. Juice limes to get 1/4 cup juice, straining out seeds.
- Make simple syrup (if needed): Heat equal parts sugar and water until sugar dissolves. Cool before using.
- Blend: Add fresh strawberries, frozen strawberries, rum, lime juice, simple syrup, and ice to blender. Blend on low, then high speed for 30-60 seconds until smooth and slushy.
- Taste and adjust: Sample and add more simple syrup if too tart, or more lime if too sweet. Adjust to your preference.
- Serve immediately: Pour into chilled glasses. Garnish with lime wheel, fresh strawberry, and mint sprig. Serve with straws.
Notes
- Fresh lime juice: Essential for proper flavor. Bottled juice doesn’t work well.
- Consistency: Should be thick and slushy but pourable. Add ice if too thin, liquid if too thick.
- Sweetness: Start with less simple syrup and add to taste. Sweetness preference varies.
- Make ahead: Pre-portion ingredients in freezer bags. Blend with ice when ready to serve.
- Virgin version: Omit rum, add extra strawberries or splash of club soda.
- Storage: Best served immediately. Can freeze up to 24 hours but texture degrades.
- Blender: High-powered blenders work best but regular blenders work fine with longer blending time.
