Instructions
Make blueberry lavender simple syrup by dissolving sugar in water over medium heat. Add blueberries, simmer 5-7 minutes until broken down. Remove from heat, add lavender, cover and steep 10-15 minutes. Strain twice for clarity, pressing on solids. Cool completely. In large pitcher, combine fresh lemon juice with half the water. Gradually add cooled syrup to taste. Add remaining water and adjust sweetness. Chill thoroughly 1-2 hours. Serve over ice, garnished with berries, lemon, and lavender.
Notes
Use only food-grade culinary lavender—never craft lavender. Don’t oversteep lavender or it becomes soapy. Cool syrup completely before mixing. Adjust sweetness gradually. Color fades over time—serve within 24 hours for most vibrant purple. Strain syrup twice for professional clarity. Make syrup up to 3 weeks ahead. Can substitute other berries. Best with fresh lemon juice.
